At Dum Affairs he is responsible for the food and beverage operations of the restaurant. With an aim to give an edge to the Awadhi cuisine served and savoured by the Delhi Palette, he would like to make Dum Affairs, one of the most sought after food destinations in the city. While making sure that the most authentic flavours and cooking techniques are used while cooking the food, he has also introduced delicious contemporary dishes to the menu.

The chef’s appreciation for the delicate art of blending spices that is the hallmark of good Indian food started at a young age. He grew up seeing his mother prepare exotic dishes for the family and take an extra effort in cooking with sophistication. Chef Vikas who firmly believes Quality Begets Quality makes use of only the best cuts of meat and fish, and freshest and most fragrant spices to prepare his favourite Bukhara and Mughlai delicacies, turning out succulent kebabs, aroma laden smooth curries and exotic biryanis bursting with supreme flavour.

Consultant and entrepreneur, Chef Vikas is a veteran Indian chef who has embellished award winning quality Indian restaurants like Dumpukht, The Maurya, a luxury collection hotel in New Delhi, Bukhara at Kempinski Hotel Ajman in U.A.E. and Saffron – The Pan-Indian restaurant at Trident Gurgaon. He is skilled from the two world famous culinary schools of Northern India – the Dumpukht style that involves the preparation of aromatic and exquisite Mughlai or Awadhi food. Chef Vikas has popularized his favorite cuisines among diners in India and the Middle East. Chef Vikas holds a degree in hotel management from IHM, Gwalior in 2000 from where he moved to get trained in the DumPukht and Bukhara Kitchens at the ITC Hotel Maurya Sheraton in New Delhi.

Chef Vikas counts various heads of state internationally like Mr. Bill Clinton, Mr. Nicholas Sarkozy, Singaporean President, Mr. S.R. Nathan and last yet not the least the Prime Minister of India, Dr. Manmohan Singh, as his satisfied guests so far in his culinary career, and looks forward to taking many more guests on an exciting and exotic culinary journey.

His all time favorites on the lavish Dum Affairs menu like the Galauti kebab, Chapli kebab, Gosht Nehari, Awadhi Haleem, Biryani, Pista Kulfi and Phirnee. Chef Vikas wants to bring back the tradition of preparing a truly royal spread which is rich in taste and nutrients to the food lovers in Delhi.
